Case Study

How Gosford RSL is using CellarControl to improve their beer quality while reducing their line cleaning costs.

Overview

Located on the Central Coast Highway, the Gosford RSL Club is a hub of the Central Coast community – offering dining, leisure activities and free entertainment. The Luminous Brasserie is open for lunch and dinner daily, and they have numerous Sub Clubs supporting the local community.

  • Objective

To provide exceptional beer quality, while reducing wastage by extending beer line cleaning cycle to six weeks. Previously conducted line cleans every 2 weeks.

  • Solution

Installed CellarControl in January 2013, to treat 17 tap beers.

  • Testing overview

Tests conducted by ALS Food & Pharmaceutical on 4 beers – Super Dry, One Fifty Lashes, VB and Tooheys New. Beer samples were taken at two weeks following line clean without CellarControl, and another at six weeks following a beer line clean with CellarControl installed and tested for wild yeast and lactic acid counts. The lower these counts, the better the beer quality.

Test results – two and six week cleaning cycles

All figures are in colony forming units (cfu) per ml. Lower numbers indicate better results.

Conclusion

The test results showed a marked improvement in beer quality compared to two week cleans, most notably a significant improvement in lactic acid counts – a major cause of beer spoilage. All six-week results are well within optimal guidelines.

Serve great quality beer while reducing your line cleaning costs.
